1Dice the onion and fry on low heat in a large saucepan with a pinch of salt until soft
2Add in the garlic and fry on low for 30 seconds (don’t let it go brown or it will taste bitter)
3Add in the spice and fry for 30 seconds
4Peel and cube the sweet potatoes then add to the pan and coat in the spices
5Add in the coconut milk, stock cube and water
6Simmer for 25 mins or until the sweet potato is soft
7Blend and season with salt and pepper to taste
