Sweet potato and coconut soup

Method


  • 1Dice the onion and fry on low heat in a large saucepan with a pinch of salt until soft


  • 2Add in the garlic and fry on low for 30 seconds (don’t let it go brown or it will taste bitter)


  • 3Add in the spice and fry for 30 seconds


  • 4Peel and cube the sweet potatoes then add to the pan and coat in the spices


  • 5Add in the coconut milk, stock cube and water


  • 6Simmer for 25 mins or until the sweet potato is soft


  • 7Blend and season with salt and pepper to taste

Notes


  • Nice with roasted chickpeas sprinkled on top

Mine didnt look like the pic but it tasted nice still lol
