Method


  • 1Preheat oven to 200 degrees


  • 2Chop vegetables into large chunks and toss in a deep baking tray with 2 tbsps of olive oil, salt and pepper then bake for 10 mins.


  • 3Add the tomatoes, garlic, and basil, stir and then bake for a further 15 mins


  • 4Slice the halloumi into 6 and place on top of the vegetables


  • 5Drizzle with the remaining olive oil, season with pepper and bake for 15 mins until the halloumi is golden brown

Notes


  • Can be served with flat bread or just in its own
