1Roughly dice onion
2Melt butter in a large sauce pan and fry onions on low heat until soft
3Add tomatoes, water, oxo and bring to a simmer
4Stir in sugar and balsamic vinegar
5Season with salt and pepper and simmer for 40 mins (add more water if soup mixture becomes too dry)
6Blend until smooth and serve hot
