1Heat sesame oil in a pot over medium heat. Add onions, garlic, and ginger, and cook until fragrant.
2Pour in broth, add miso paste, and soy sauce. Bring to a simmer, stirring to dissolve the miso.
3Add mushrooms and simmer for 5 minutes, until tender.
4Cook ramen noodles according to package instructions and divide them between bowls.
5Add spinach to the broth just before serving. Pour hot broth and vegetables over noodles.
6Top each bowl with a soft-boiled egg and green onions. Serve hot.
