Method


  • 1Heat sesame oil in a pot over medium heat. Add onions, garlic, and ginger, and cook until fragrant.


  • 2Pour in broth, add miso paste, and soy sauce. Bring to a simmer, stirring to dissolve the miso.


  • 3Add mushrooms and simmer for 5 minutes, until tender.


  • 4Cook ramen noodles according to package instructions and divide them between bowls.


  • 5Add spinach to the broth just before serving. Pour hot broth and vegetables over noodles.


  • 6Top each bowl with a soft-boiled egg and green onions. Serve hot.

Notes


  • To make it vegetarian, use vegetable broth and omit eggs.

  • Adjust the amount of miso paste to control the saltiness of the broth.
